Sunshine Citrus Cake

Citrus-Cake-Frosting Hi KokiDoo Friends,

it’s time for another delicious recipe. For this cake I got inspiration from the weather and from my husband mood, while the great Sweetapolita enlighted me for the frosting. So, keep calm and let’s start from the beginning.

Here in Sweden is still damn cold. The temperature is not going under zero mostly anymore but we are facing the tail of the winter, which means we went through an apparently never ending cloudy day season. Sun really never showed up since November as far as I recall. So, a bit depressing indeed. I am Swedish and I got used to the weather but my husband is pretty moody. He is italian, You know: sole, mare, la dolce vita 🙂 and these long grey winters mean vitamin D pills, vitamins pills in general and a raising of his hopes that spring will kick in soon.

Here in Sweden, the luckier guys go to some warm place in this part of the year like Canary Island, Azores, some Greek island. Ah, sole, mare, la dolce vita.

Citrus-Cake-OrangeSo, I thought to raise up a bit his mood letting him having a sweet taste of summer with my vitamin C rich, sweet, “Sunshine Citrus Cake”. This delicious recipe contains lemons, red oranges and clementines. My mind is already dreaming about these warm lands full of big, juicy orange and lemon trees waiting to be picked up under an hot sun. Soon!

I decided to use citrus fruits for my curds cause they have very nice shining and warm colors, they are tasty and associate very well with summer. If You love my lemon curd, You can find it also in this recipe. In addition, I tried to make a red orange lemon curd. I didn’t find very red oranges in my city but that is the best I could do. The result was anyway a remarkably delicious curd. I am sure that the reddish they are, the more colorful Your cake will be. Finally, the cake texture is very pleasantly soft and moist and it is perfect with the lemon and orange curd in between.

Coming back to our frosting, I thought to completely cover my cake with a fresh lemon frosting. To complete the all thing, I just put a crown of clementine slices on top.

Sunshine Citrus Cake is very easy to cut as I showed You in the below photo and I have to say that it taste as good as it looks. When I ate it, I could definitely feel the citrus fruits that are present in every part of the cake.

Sunshine Citrus Cake

Have a taste of summer: enjoy this fruity, creamy, moist Citrus Cake!

Ingredients

    For the cake:
  • 4 eggs
  • 2,5 dl sugar
  • 2 tsp baking powder
  • 1,25 dl flour
  • 1,25 dl potato starch
  • Zest from 1 orange
  • For the lemon curd:
  • 3 lemons (zest and juice)
  • 1,5 dl sugar
  • 50 g butter
  • 2 eggs
  • 2 egg yolks
  • 1 tbsp corn starch
  • For the red orange curd:
  • 2 red oranges (zest and juice)
  • 1 dl sugar
  • 50 g butter
  • 2 eggs
  • 2 egg yolks
  • 1 tbsp corn starch
  • For the lemon frosting:
  • 150 g butter (at room temperature)
  • zest from one lemon
  • 7,5 dl powdered sugar
  • 1 tsbp lemon juice
  • 2 tbsp cream
  • 2 tbsp lemon curd
  • For the decoration:
  • 1-2 clementines

Procedure

    For the cake:
  • Butter and bread two 15 cm cake pans.
  • Preheat the oven to 150 degrees.
  • Whip egg and sugar until very light and fluffy.
  • Mix flour, potato starch and baking powder in a bowl, add it to the eggs and sugar and mix with a spatula until well blended.
  • Add the orange zest and mix again until well blended.
  • Divide the batter in the two cake pans and bake for 20-25 minutes until a cake tester comes out dry.
  • For the lemon curd:
  • Put zest from three lemons and juice from two lemons together with sugar and butter in a saucepan and heat until it starts to boil.
  • Remove the pan from the heat.
  • Mix the lemon juice from the third lemon with the corn starch until well blended.
  • Whip the eggs and the egg yolks lightly in a bowl.
  • Pour the corn starch into the saucepan while stirring.
  • Pour the eggs into the saucepan while stirring.
  • Heat again while stirring until the curd thickens.
  • Finally pour the curd in a glass container and let it cool down.
  • For the red orange curd:
  • Put zest from two oranges and juice from one orange together with sugar and butter in a saucepan and heat until it starts to boil.
  • Remove the pan from the heat.
  • Mix the orange juice from the second orange with the corn starch until well blended.
  • Whip the eggs and the egg yolks lightly in a bowl.
  • Pour the corn starch into the saucepan while stirring.
  • Pour the eggs into the saucepan while stirring.
  • Heat again while stirring until the curd thickens.
  • Finally pour the curd in a glass container and let it cool down.
  • For the lemon frosting:
  • Cream the butter with the lemon zest.
  • Add powdered sugar slowly, while mixing.
  • Add the rest of the ingredients and mix again until very fluffy.
  • Assembly and Decoration:
  • Divide and level the two cakes into four cake layers.
  • Put the first cake layer on a cake plate.
  • Cover it with lemon curd.
  • Put the second cake layer and cover it with red orange curd.
  • Put the third cake layer and cover it with lemon curd.
  • Finally put the fourth cake layer.
  • Frost it with the lemon frosting and decorate with the clementines.
