how are You? It seems that our last Citrus Cake has partially worked with the weather here in Sweden. Sun showed up consistently in the last few days. Vitamin D come to me, yes! Still a bit of rain and of course cold but we are getting there. If I think that I have the entire summer season ahead of me, I feel like cheering!

So, let’s continue to stimulate the good weather with a new tasty, fruity, sweet dessert! My idea was to make something with summer or late spring fruits. So I went to the supermarket and looked around in the fruit department. Mmm, cherries! Gorgeous, very big, juicy, black wild cherries! Here in Sweden we have most of the fruits all year long. For example, we had watermelon through all the winter.

Cherry-Heart-Bite-2Anyway, I decided to buy those great cherries and bake KokiDoo’s “Cherry Heart Pastries”. This nice dessert is very good to look at, both the outside heart shape and the inside jammy filling. Cherry Heart Pastries have a crispy shell filled with a thick, rewarding, flavory cherry jam. What are You waiting for? They are so easy to bake! Prepare to feel a very intense cherry taste that will make You close Your eyes thinking at nothing else than enjoy Your sweet moment. The texture is just very pleasant with the outside shell meeting the thick cherry jam. The good thing with this dessert is that it doesn’t fall apart when You bite it, the consistency is just perfect! Did I mentioned that those Cherry Heart Pastries are damn good? I think I pretty much did 🙂

She baked the cake for the birthday of her very cute 2-years old grand daughter and it looked delicious. I am so glad we contributed to a little girl happiness!

Cherry Heart Pastries

Cherry Heart Pastries

Crispy heart-shaped shell filled with a thick, juicy, rewarding black cherry jam!

Ingredients

    For the Shells:
  • 4 dl flour
  • 1 dl potato starch
  • 3/4 dl sugar
  • 1 egg yolk
  • 200 g butter
  • For the Cherry Jam:
  • 250 g cherries
  • 2 tbsp water
  • 1 dl sugar
  • 1 tsp vanilla sugar
  • 1 cinnamon stick

Procedure

    For the Cherry Jam:
  • Put berries, water, vanilla sugar, and cinnamon in a saucepan.
  • Heat and let it simmer for 5-10 minutes on low heat.
  • Remove the cinnamon stick and let the cherry jam cool completely.
  • For the Heart Pastries:
  • Preheat the oven to 200 degrees.
  • Mix flour and sugar in a bowl.
  • Add egg and butter.
  • Mix until incorporated.
  • Cover with plastic foil and let the dough rest in the fridge for about an hour.
  • Butter heart shaped pans.
  • Roll out the dough and line the cake pans.
  • Fill with cherry jam and cover with dough.
  • Bake for about 15 minutes.
  • Let the hearts cool.
  • Dust with powdered sugar just before serving.
